What do you make with leftover Chicken?

After I finished a dozen chickens, I started making the names of the things we make with leftover chicken.



Those are greyish.  The word ROAST is a nice golden brown because that's what the whole thing starts with.

I've got an idea of what this quilt will look like, and I may need more things to make with leftover chicken.  For those of you following along, I already have Chicken...

Salad
+ Dumplings
Pot Pie
+ Noodles
Soup
Casserole
A La King
Tetrazzini
Sandwiches

Since I often chat with my pal Julie off line, she knew of my dilemma and suggested these:

Quesadillas
Stir Fry
Teriyaki
Ragout
Fritatta
Chichimangas
Enchiladas
Fajitas
Croquettes
(can you tell Julie lives closer to Mexico than I do?

I have two others:
Fricassee (both sides of my family are French-Canadian)
Fried Rice

I am sure there are lots of things I have missed. Do you have any suggestions? Remember, it has to be called "Chicken xxxxxxxxx"

How about Thai Chicken Pizza? Can you tell I live in southern California? We're all about "Designer pizza". :-)
